Banana Bread

The perfect version. Nuts do not belong in banana bread.

Ingredients

  • Very ripe bananas   (3)
  • Butter, at room temp   (½ cups)
  • Granulated sugar   (¾ cups)
  • Eggs   (2)
  • All-purpose flour   (1 ½ cups)
  • Baking soda   (1 tsp)
  • Salt   (½ tsp)
  • Vanilla   (½ tsp)

Instructions

  1. Preheat the oven to 350°F.

  2. Grease and flour a bread loaf pan (9.25 long x 5.25 wide x 2.75 deep).

  3. In a mixing bowl, cream together butter and sugar.

  4. Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with 2 eggs, mixing until blended.

  5. In a separate bowl, whisk together the dry ingredients. Then add them to the batter.

  6. Mix in vanilla vanilla.

  7. Pour into prepared loaf pan and bake at 350˚F for 55-60 min or until a toothpick inserted into the center comes out clean. Let banana bread rest for 10 min before transferring to a wire rack to cool.
